I'm having a problem with changing approaches... that is, I've entered one approach for a given airport, then want to change it to another, same airport. It SEEMS to load one approach on top of another... or am I wrong? Is there a way to delete an approach before selecting a different one? Or should this be necessary?

I delete the current approach before loading a new one. I highlight the current approach in the destination box (e.g. App: ILS 17L), hit delete and then enter to confirm. The methodology is a bit odd but it's easy enough once I got used to it.

Deleting the old approach won't hurt anything but it creates extra work and is not really necessary.

To load a new approach for the existing destination airport, press the PROC button and select the desired approach. You should get a prompt asking you to confirm that you want to replace the existing approach. Once the new approach is loaded, go direct to one of its fixes or activate the leg you want to intercept.

As always, pay attention to which leg is shown in magenta. That's the leg that the IFD wants to fly.

I find that if I've activated the approach, then I get the prompt asking if I want to replace the existing approach. If I haven't activated it, then I don't get that message, and that's where the problem seems to come up... one can be loaded on top of another?

You can have multiple destination airports and multiple approaches in a flight plan. That's one of the strengths of the IFDs. They're really not loaded on top of each other. They're in the flight plan waiting to be used.

To fly one of them just go direct to one of the waypoints in the approach or make one of its legs the current leg.
